A NATURAL ELECTROLYTE DRINK RECIPE: THE GINGER SWITCHEL

Image
A NATURAL ELECTROLYTE DRINK RECIPE: THE GINGER SWITCHEL  One of the most refreshing and natural electrolyte drinks, the ginger switchel, also known as Haymaker’s punch, is regaining popularity partly because of its health benefits, and partly just because it is delicious and perfectly hydrating. In the last few weeks of summer, I discovered a refreshing drink that I wish I had discovered earlier, the switchel. I have to admit, I’d never heard of it before, and I came across it by accident one day when looking for something to settle my stomach. I had been drinking some ginger tea, but it was so hot out that I wanted something more refreshing. My idea was to make a type of ginger lemonade of sorts, or to infuse ginger into kombucha, and out of curiosity decided to do a search online to find if others were already making something similar. (That’s a crazy blogger habit that comes from wanting to see how original I really am/am not.) Ingredients 1/8 cup maple syrup 1/4 cup apple cider...

VEGETARIAN WHITE CHILI

Image
VEGETARIAN WHITE CHILI  A white chili is a classic chili made with white beans, chicken, cheese, and cream. Often you can also find sour cream on the ingredient list as well. Obviously this combination is not vegan or diary free. Before vegan days, white chili was one of my favorites. Pretty easy to make and full of flavor. You can imagine that I often used prepacked mixes. Just open a package and the flavor “magic” will happen. Easily done, you only need a bunch of ingredients and you can do it. All was well explained, it was a dumb easy method. Well, of course, that’s way in the past. Now, I made a vegan version of white chili and it turned out so delicious. I never expected that you can veganize this classic dish in such a way. I made it for some friends and even the pickiest meat lovers finished the bowl in no time. Try it for yourself, serve to friends, loved one or family. It’s hearty, creamy, flavorful, wonderfully satisfying, stuff that you would eat almost every day, packe...

CZECH REPUBLIC: KREMROLE

Image
CZECH REPUBLIC: KREMROLE  One of the most popular and traditional Czech pastries, Kremrole, literally “roll of cream”, is a crispy roll-shaped puff pastry filled either with meringue or whipped cream, that is sweet and slightly flavored or not With the Czech Republic located at the heart of Europe, its cuisine could only be influenced by its neighbors, Germany, Austria, Poland and Slovakia and vice versa. You can find kremrole in all these countries and, like the buchty, kremrole is very popular throughout the region of Bohemia, this historic region of Central Europe, bordered by Germany, Poland, Austria and the Czech Republic. In Austria, these cream rolls are called Schaumrollen, which literally means “foam roll” and the Germans call them Schillerlocken. Kremrole has a roll shape. It is filled with whipped cream or meringue. It usually measures between 2 and 3 inches. Kremrole is made by cutting 1-inch wide strips of dough wide that are rolled in a spiral around a metal tube and ...

broccoli cauliflower casserole

Image
broccoli cauliflower casserole One of my favorite vegetable is cauliflower and I love to create new recipes with it. Mostly for my family. Okay, particularly for my husband because our 4-year-old son and I already love this vegetable so much that we can live on it. We never need anything complicated. Give us a head of raw cauliflower and we can just sprinkle some salt, squeeze some lemon on the florets and eat it as a side. On the other hand, my husband is quite picky about some vegetables including cauliflower, so I try to find the right recipe for him. Guess what? He ate this broccoli cauliflower casserole so heartily that he finished it in a minute and asked for the second. This is the second cauliflower recipe he liked in one week and you can imagine how I am proud of myself. He already has a favorite cauliflower recipe that I make often and shared with you long time ago: Cheesy Cauliflower Casserole. We even made a video for it in case you need. This time I wanted to change things...

MA PO TOFU RECIPE – THE REAL DEAL

Image
MA PO TOFU RECIPE – THE REAL DEAL  Ma Po Tofu recipe (this Spicy Garlic Tofu from way back when, which is also delectable), but the truth of the matter is that that dish was a mere spin on this classic dish. This version is the true blue, authentic real deal—the spicy, tongue-numbing, rice-is-absolutely-not-optional, can’t-have-just-one-scoop version that you get in the restaurants. The bright spicy red sauce has a healthy amount of oil (and when I say healthy, I mean not healthy at all) that coats the soft cubes of silken tofu, tasty bits of ground pork, scallion, and spicy Szechuan (or Sichuan) peppercorns. See those peppercorn bits? The key is that as you’re eating the tofu, the peppercorns impart bursts of that mouth-numbing ma la (numb and spicy) goodness that is Szechuan food. You can adjust to your own preferences, though; if you want it more powdery, it dissolves into the sauce, and you don’t get as much of that kick-in-the-tongue sensation. Normally, I would go for a finer...
